Ingredients

  • 1 small banana
  • 1 Happy Chicken Egg
  • 3 Happy Chicken Egg whites
  • 30g protein powder, preferably chocolate
  • ¼ cup of coconut flour
  • 1 ½ tsp cocoa powder
  • 150 ml water
  • 2 tsp desiccated coconut
  • 2 tsp coconut oil
  • 2 tbsp greek yoghurt

Method

Mix together the banana, Happy Chicken Egg and egg whites, protein powder, coconut flour, cocoa powder and water in a blender until smooth. Add more water if the mixture is a little thick.

In a non-stick frying pan over medium heat, add the desiccated coconut and toast till golden. Save half to garnish, stir the rest into the pancake batter

In the same fry-pan, melt the coconut oil and ladle large spoonfuls of the batter for 1 minute, flipping then cooking the other side for another 30 seconds. Use up all the batter and stack the pancakes once cooked.

When ready to eat, drizzle of the yoghurt and sprinkle the toasted coconut and some cocoa powder. Eat up!
