Ingredients

  • 1/2 cup corn flour
  • 1/2 cup custard powder
  • 1/2 tsp cream of tartar
  • 1/2 tsp bicarb soda
  • 4 Happy Chicken Eggs
  • 3/4 cup sugar
  • Pinch of salt

Method

Preheat the oven to 180oC.

Mix sugar and Happy Chicken Eggs until light and fluffy.

In a separate bowl, whisk the dry ingredients together. Carefully fold the dry ingredients into the sugar and egg mixture.

Pour the mixture into a lined cake tin, and bake. Take it out of the oven when it’s golden brown and the center bounces back when pushed gently or when a skewer inserted in the middle of the cake comes out clean.
